At West Loop Salumi they also serve some great breads, and a rotating cast of amazing cheeses. As you can tell, the shop is small, but it is incredibly productive. They make everything right in back. Much of their business is in partnerships with local restaurants (Eataly) and grocers (Plum Market), as well as clients like Jet Blue (they supply the snack sausages), but they figured since their shop is right on Randolph Street, one of the most popular foodie streets in the city, why not open the doors for walk-in traffic. They’ve become a local favorite in the neighborhood and lots of people stop by.  

The meat should be softer, the texture is important as you don’t want it hard and rubbery.  It’s like when you’re buying packaged meats at the grocery store, pay attention to the ingredients – the fewer the better. They keep it simple, and trust their process of trimming the meat, grinding, seasoning, mixing, stuffing, tying, fermenting, and hanging will do the trick.
